Zydeco Chop Chop Potato Salad
- 1 pounds cubed red potatoes, skins on
- 1 tablespoon of liquid crab boil
- 3 hard boiled eggs
- 1/3 cup rehydrated Zydeco Chop Chop
- 1 1/2 tablespoons Creole mustard
- 1 tablespoon Slap Ya Mama seasoning
- 1/2 cup tablespoons mayonnaise
- 1/4 cup chopped Tabasco Spicy Pickles
- 1 1/2 teaspoons salt
- 1/2 teaspoon ground black pepper
- Add potatoes and crab boil into a large pot of boiling water. Boil until potatoes are fork tender. Set aside to cool. Roughly chop potatoes.
- Chop hard-boiled eggs into bite-sized pieces. Combine eggs and potatoes.
- In a small bowl, whisk together remaining ingredients. Pour over potatoes, tossing gently to coat.
- Cover and refrigerate.
