Zydeco Chop Chop Breakfast Casserole
• 6-10 Large Eggs
• 6-8 Slices of day old (or toasted) bread, torn into 1 inch pieces
• 2 cups cheddar cheese (reserve some to top casserole with)
• 2 cups milk
• 1/4 cup dry Zydeco Chop Chop
• salt & pepper
• 1/2 tablespoon Cajun seasoning
• 1/2 lb cooked breakfast sausage
• sliced mushrooms
• chopped broccoli
• chopped red/orange/green peppers
• sliced red onion
( these are just veggie/ meat suggestions, you can really use anything you and your family likes)
Crack and beat eggs, combine with milk, 1 1/4 c of cheese, Zydeco Chop Chop, salt and pepper and Cajun Seasoning. Add the bread and carefully stir until all pieces of bread are moistened (don't over mix or the bread may disintegrate). Set aside.
Cook sausage until browned. Cook any vegetables that give off a lot of water (mushrooms- in the recipe). Combine sausage, mushrooms, broccoli, peppers and onion. Combine egg/bread mixture and mix-ins and transfer into a 9x13 inch.
Bake at 350 degrees for 50 minutes.
** This casserole can be assembled the night before and kept refrigerated until ready to bake.
