Zydeco Chop Chop Gumbo
1 cup flour
1 cup canola oil
1/2 c Zydeco Chop Chop
1 whole chicken
1 pound pork sausage
2 pounds smoked sausage
2 tbsp bouillon chicken base
Cajun Seasoning to taste
Fill a large pot 3/4 of the way full of water and put on to boil with some salt.
When boiling add in whole chicken (May have to take some water out), boil for 45 mins.
Meanwhile (start when you put water on to boil) heat the oil over medium and then add in flour when hot. Whisk constantly until roux is a chocolate color (Between milk and semi-sweet)
While the roux is cooking remove chicken from the pot of water (do not discard the water) and let cool slightly and shred it.
Add in Zydeco Chop Chop and sauté for 30 seconds.
Put roux mixture into the boiling water with two tablespoons chicken base.
Add in sausage (freeze for like 30 mins to make easier to cut) and shredded chicken and put to a rolling simmer covered and let cook a couple of hours.
Season with your Cajun Seasoning of choice.
