Zydeco Chop Chop Corn Dip
Ingredients
2 cans of whole kernel corn, drained
¼ cup of ZCC hydrated with ½ cup water
1 block cream cheese
1 cup shredded cheddar cheese
4 oz sour cream
Juice from ½ lime
2-4 tbsp chopped cilantro
1 jalapeno, chopped
½ tsp cayenne pepper
Salt to taste
Directions
In a medium saucepan add in rehydrated ZCC and sauté for 2-3 minutes
Add in corn, jalapeño, cream cheese, cayenne pepper, and salt and heat over medium heat. Stirring occasionally until cream cheese is melted and ingredients are well incorporated.
Stir in cilantro, lime juice, and sour cream then transfer to a baking dish.
Bake 350°F for 20 minutes
Serve with corn chips
